Value addition is defined as any additional activity that in one way or another changes the nature of a product thus adding to its value at the time of sale. Value-added food products are raw or pre-processed commodities whose value has been increased through the addition of ingredients or processes that make them more attractive to the buyer and/or more readily usable by the consumer. It is a production/marketing strategy driven by customer needs and perceptions. ICAR-CIFT has developed different types of value added fish products like coated products, pickles, wafers and ready to eat and cook products.
